If you’re like me, you’ve probably purchased an Optavia snack or meal replacement bar before ( I think they taste like chocolate graham crackers with icing on top). 

So I decided to make my own. They are easy to make and pretty delicious. Remember that this recipe makes 12 bars, but it can easily be divided in half.

Ingredients:

1. 1/2 cup dry quinoa

2. 1/4 cup peanut butter (or any nut butter) 

3. 1/4 cup honey (if vegan, replace with other coconut sugar

4. 2 Tbsp ground flaxseed (optional- for added fiber and omega-3s)

Directions:

1. Follow the instructions on the package or cook on the stovetop by adding one cup of water for each 1/4 cup of dry quinoa.

2. Mix all ingredients together in one bowl. Mix well until the mixture is sticky but not enough to keep it together. 

If it is too crumbly, add either more peanut butter or honey. If it is too sticky, add additional quinoa or ground flaxseed.

3. Once the mixture is ready, spread into an 8×8 pan that has been lined with parchment paper (or lightly greased). Use a spatula to flatten and push the mixture to the edges of the pan.

4. Place in freezer for 20-30 minutes or fridge for 3-5 hours to set. Take out and cut into 12 bars. They can be kept in a closed receptacle at room temperatures; however, keeping them in the refrigerator is recommended to stop the melting.
